I am such a sucker for colorful ingredients and salmon is certainly one of those items that draws me in, the oranger the better! Deep orange colored salmon is usually only found in wild caught salmon which live in the coldest portion of the northern oceans of the Pacific and the North Sea. Luckily, wild caught is also a more sustainable choice as well as higher in the essential omega-3 fatty acids for which salmon is prized.
In case you have been living in a land locked, electricity free zone, you might not have yet heard that salmon is one of those nutritional superfoods. But that’s not why it’s always high on my list of favorite dishes. It simply tastes delicious, especially with this slightly sweet, Chinese style marinade.
Not only is this a delicious way to prepare salmon, but relatively easy. Frozen steaks placed in the refrigerator in the morning are defrosted by dinner time, and the great thing about salmon is that it does not need (nor like) a long marinating period. Prepare the marinade before starting the grill to give it at least 1 hour in the sauce.
If you wanted to spice up this version, add some minced garlic or fresh ginger or even some chili oil or flakes.
Hoisin Marinated Salmon Steak
2 tablespoons hoisin sauce
1 tablespoon water
1 tablespoon soy sauce
1 lb salmon steaks
Mix hoisin sauce, water and soy sauce until well blended. Marinate fish in sauce for 1 hour, 2 at the most. Place on grill skin side down and grill over charcoal fire until inside is cooked through. Serve immediately.
